Thanks for the compliment on our name. It's also the name of our open source consultancy here in Portland, Oregon.
You might check out the Non-profit Open Source Initiative at nosi.net. They have some good mailing lists wherein education comes up periodically, and search the archived discussions might be useful as well.
If you need some paid expert help getting schools over to open source software, give me a jingle. :)

Anyway, Brother Space Monkey, there is so much to tell you. I'll first point you to Edu-nix (www.edu-nix.org), where you will enjoy downloading the excellent livecd there and using it to impress teachers and parents (and yourself) with tons of cool software. Moving along, you will find edubuntu (ubuntu.org click the edubuntu link) and find out about how to use linux terminal services in creative and cool ways. Beyond that there are many mailing lists you will desire to get involved in, probably the most important of which is schoolforge (www.schoolforge.net). May the source be with you and if you need anything message me.
